March 1st... that must mean spring????

I'm hoping to be there but probably just for a walk and Bliss. I'm finally over the flu but I'm exhausted from looking after my kids who are still sick. Hope to see anyone there.

ill be there I think.. I ate lots of pizza tonight for dinner and that could be a bad thing.... hope to see you tommorrow.

Oh - here's the recipe you asked me to post.

Saute one chopped onion and 1 clove garlic in olive oil. Add two tomatoes chopped. Saute until starting to soften. Wilt as much spinach as you can fit in the pan (2-3 c fresh - to taste). Set aside. You can really saute whatever veggies you like. Leave them a little crunchy as they will cook on the pizza too. You can also saute chicken with the onions in the beginning if you want meat on the pizza.

Roll out pizza dough into a 9x13 rectangle. (To make pizza dough use 2 c warm water. Dissolve 1 T yeast. Add 1 t salt and about 6 c flour. Can use wheat or white. I usually mix them. Should be stiff dough. Makes two. )


Spread with about 2 T mayonnaise and sprinkle with Parmesan cheese.

Spread prepared veggies on top. Sprinkle with grated cheese and oregano. Fold in thirds lengthwise to make a long roll. Bake at 375 until lightly brown. Slice into 1 in slices and serve.
